Lemon cookies easy recipe.  Today we learn the process for homemade lemon cookies. These delicious treats are very simple to make and require a few ingredients. They are suitable for those who have little time or are not very familiar with complicated recipes, or simply in all cases of “emergency” such as sudden guests. 1 egg
100g sugar
100g sunflower oil
1 teaspoon of baking powder
Grated peel and juice of half a lemon.
300g flour 00
Icing sugar



In a bowl break the egg, add the sugar, the sunflower oil, 1 teaspoon of baking powder. Mix very well.

Then add the grated peel and the juice of half a lemon. Mix everything and start adding 300 g of flour a little at a time, continuing to mix carefully.

When the  dough starts to solidify, place it on the table and continue to knead it with your hands, gradually adding all the flour. In the end you will get a soft and elastic dough.

Now we prepare a plate with icing sugar and a baking tray  with a baking paper sheet on it. To shape the  lemon cookies, make little balls with the dough.

To obtain balls of the same size, it is useful to form a roll of dough and then cut it into small pieces with the knife, then form the balls with your hands.

Now the final touch: pass every ball  on icing sugar and place it on the baking tray.

Bake at 180°C / 355°F  for about 20 minutes.

The lemon cookies are ready!  Remove them from the oven and see how soft and delicious they are! Let them cool before eating.

These homemade lemon cookies are also beautiful to look at, I would say they are almost … elegant … suitable for tea time … or as often as you like!
